Lion's Mane "Steak" with Herb Butter
Thick slices of Lion's Mane, seared to golden perfection, topped with a compound butter of thyme, garlic, and lemon zest. A showstopping plant-based centerpiece.
Ingredients
- 400g fresh Lion's Mane mushroom
- 3 tbsp butter (or vegan alternative)
- 2 cloves garlic, minced
- Fresh thyme and rosemary
- Lemon zest, salt, and black pepper
- 1 tbsp olive oil
Method
- Slice Lion's Mane into 2cm thick "steaks." Pat dry with a clean towel.
- Heat olive oil in a cast iron pan over medium-high heat until shimmering.
- Sear mushroom steaks 3-4 minutes per side until deeply golden.
- Add butter, garlic, and herbs. Baste the mushrooms for 1 minute.
- Finish with lemon zest, flaky salt, and freshly cracked pepper.
